The crispness in the air lately has me craving all of the fall inspired snacks, and these apple pie protein bites hit the spot. They have dehydrated apples and cinnamon, to give that quintessential apple pie flavor, and Needed collagen’s (LOVEDAPHNE gives you 20% off your order!) I love that Needed’s collagen is single ingredient, 3rd party tested, and includes 14g of protein in one serving! It also supports healthy joints, hair, pelvic floor health, and skin elasticity. Plus it’s pregnancy safe (and has so many additional benefits for pregnant mothers!) I’ve used and trusted the Needed brand for the past several years ( in fact, I took their egg quality supplement before conceiving Clover!), so I was more than thrilled to develop this recipe in partnership with them!
NO BAKE APPLE PIE PROTEIN BITES
In a food processor combine:
1 cup pitted medjool dates
1 cup sprouted cashews
1/3 cup coconut oil
1 1/2 cups dehydrated apple chips
3 tbs sprouted hemp seed
1/3 cup maple syrup
Pinch of salt
1 tbs cinnamon
1 tbs vanilla
1 scoop of Needed collagen peptides
Pulse until all combined into a cookie dough like consistency. Add in 1/4 cup of white chocolate chips if desired. Form into balls and place on parchment lined baking sheet and freeze.
For glaze (optional as it does add sugar)
Melt over a double boiler:
1 cup white chocolate chips
1 tbs pumpkin pie spice
Mix and drizzle over the bites and place back in the freezer to store. At them right from the freezer!
