🍫Sweet Potato protein Brownies (9-inch round)
1 cup mashed sweet potato (very soft and smooth)
6 tbsp melted butter
2/3 cup maple sugar
2 large eggs
2 tsp vanilla extract
1/2 cup Nutra Naturals Choc Whiz mix
2 tsp cocoa powder
1/2 cup oat flour (or GF flour)
1/4 tsp salt
1/2 tsp baking powder
1/2 cup plain Greek yogurt – I used sheep milk yogurt

🥣Directions
Preheat oven to 350°F. Grease or line a
9-inch round dish.
In a bowl, whisk together:
sweet potato, melted butter, and maple sugar until smooth. Add eggs and vanilla. Whisk until glossy. Stir in:
hot chocolate mix + cocoa powder. Mix in the yogurt until fully incorporated.
Fold in: oat flour, salt, and baking powder until just combined.  Spread into your dish.

Bake for 22-28 minutes, until the center is just set. (Slightly underbaked = fudgier).
Let cool well before slicing-it will firm up as it rests.

🍨Frozen yogurt:
Add the following to your cold ice cream maker drum and mix until desired consistency:
2 cups full-fat Greek yogurt
1/3-1/2 cup maple syrup
1 tsp vanilla extract
Pinch of salt
