
We love having tea time in the afternoons, especially in the fall and winter months, It’s a time to reconnect, nourish our bodies and hearts, and spend time together. Creating these moments of connection and joy are a pivotal part of creating your own family culture. I talk much about this in my book, available now! Here is a recipe (also in the book) that our family loves for something extra special to accompany tea time. It’s the fluffiest, perfectly spiced pumpkin snack cake with cream cheese maple frosting and it is SO good for a little something special!
Pumpkin cake
1 cup pumpkin puree
2 eggs
½ cup sugar
½ cup brown sugar
½ cup melted butter
¼ cup yogurt
1 cup flour
2 tsp pumpkin pie spice
1 tsp baking powder
1 tsp baking soda
Cream cheese frosting
8oz softened cream cheese
½ cup butter
1 ½ cups powdered sugar
1 tsp vanilla
2 tbsp maple syrup
Combine all cake ingredients and pour into a greased 9×13 pan. Bake at 350 for 30 minutes, then cool completely. Then in a stand mixer, combine frosting ingredients and spread on top of the cooled cake.
