To a mixing bowl add the following:
•Two sticks of salted softened butter
•3/4 cup sugar
Cream together then add:
•1 egg
• 1 tsp vanilla
•1 tsp almond extract
Cream together again then add:
•2 1/4 cup flour
Mix again until incorporated. Dough will be crumbly. Pour out onto plastic wrap and shape into a disc, wrap it up and place in fridge for at least an hour. After chilling, preheat oven to 375, and roll tablespoon size balls onto parchment lined baking sheets. Use your finger to make a little well and fill it with raspberry jam (any jam could work really!). Bake for 12 mins, let cool then drizzle with icing.
For Icing:
Whisk together 1.5 cups powdered sugar, 1/4 tsp almond extract, and about 2 tbs half and half. Enjoy!
