Makes Two Tall 6-inch Layers

Ingredients

2 cups all-purpose flour

1½ tsp baking powder

½ tsp baking soda

½ tsp fine sea salt

¾ cup (1½ sticks) salted butter, softened

1 cup maple sugar

3 large eggs

¼ cup fresh lemon juice

1 tsp vanilla extract

¾ cup milk

2 tbsp sour cream or plain yogurt 

Instructions

Preheat oven to 350°F. Grease and line two deep 6-inch pans with parchment .

Whisk flour, baking powder, baking soda, and salt in a bowl.

In another bowl, beat butter and maple sugar until light and fluffy (2–3 minutes). Add eggs one at a time, beating well after each. Mix in lemon juice and vanilla.

Add half the dry ingredients, then milk + sour cream, then remaining dry ingredients. Mix just until smooth then stop. You don’t want to over mix. 

Divide evenly between pans and bake 38–45 minutes, until tops spring back and a toothpick comes out clean.

Cool completely. Chill layers 20–30 minutes before assembling for easiest stacking.

Blueberry Compote (Layer Filling + Frosting Flavor)

Ingredients

2 cups blueberries (fresh or frozen)

¼ cup maple sugar

1 tbsp lemon juice

2 tsp cornstarch or arrowroot

1 tbs water

Instructions

Simmer blueberries, maple sugar, and lemon juice, over medium heat until berries burst (5–7 minutes).

Mix cornstarch with water, stir in, and cook until thick and glossy (1–2 minutes). Cool fully.

Reserve 2–3 tbsp for buttercream.

Lemon-Blueberry Buttercream

Ingredients

1 cup (2 sticks) salted butter, soft

3–3½ cups powdered sugar

1 tbsp fresh lemon juice

2–3 tbsp blueberry compote (strained for smoother frosting if desired)

Instructions

Beat butter until very fluffy and pale (2–3 minutes).

Add powdered sugar gradually and beat until smooth.

Add lemon juice and 2-3 tbsp blueberry compote. Beat until light and creamy.

Assembly

Level cakes if needed.

Place first layer down. Spread the compote around the cover the top. Add second layer and Frost fully and smooth, or leave soft and rustic.

I’m swirl a little extra compote on top or some sugared blueberries ( just rinsed berries pat dry then roll in sugar and vanilla bean powder).
