Is there anything better than sitting outside in the sunshine, a cold glass of lemonade in hand (we make ours with fresh lemon juice, water, and agave!), and a salty cheesy soft pretzel beside you? Sounds pretty idyllic if you ask me! These are the easiest, yummiest soft pretzels to make! You can even fix them up different ways… omit the cheese and just add salt, do cinnamon and sugar instead, make a cheesy dipping sauce, or an herby butter! These soft pretzels have a chewy outside and soft inside… and that salty pecorino fresh out of the oven is a definite winner!

Ingredients:

4 cups flour

1 tsp salt

1 tsp sugar

1 cup luke warm water

2 packets (or 4.5 tsp) active dry yeast

3 tbs melted butter

salt

3 tbs baking soda

shredded pecorino cheese

2 more tbs melted butter (for top)

Instructions:

Combine the water, yeast, and sugar in a large bowl and leave for about 5 minutes to bloom. Then add the salt, flour and butter and combine. Knead the dough for about 6-8 minutes. Divide them into 8-10 pieces. Roll them out to at least 12 inches in length and shape into pretzels. Preheat oven to 450, and while that heats, bring water and baking soda to a rolling boil. Place the pretzels in the boiling water for about 30 seconds each side them place on a wire rack to dry a little. Then bake on baking sheet for 10 minutes. Out of the oven, brush with melted butter and sprinkle with salt and pecorino.
