This overnight cinnamon bake has all the delicious brown sugar, cinnamon, buttery flavors of homemade cinnamon rolls, but only takes 5 minutes to throw together, bless it! Here’s how I do it…
2.5 cups cubed bread
6 eggs
1 cup whole milk
2 tablespoons cinnamon (I use ceylon)
1 cup brown sugar
Add cubed enriched bread to a buttered 8×11 baking dish (you can use my homemade sandwich bread recipe or just something store bought that is fluffy and enriched like brioche). Whisk eggs, milk, brown sugar and cinnamon together and pour over the bread.
Stick it in the fridge overnight!
The next morning, bake at 375 for 35-40 minutes.
Frosting:
3/4 cups softened butter
2 cups powdered sugar
2 tablespoons maple syrup
1 tablespoon vanilla
Mix all together in a stand mixer until smooth! (in my reel my frosting split because I added some half and half at the end – it wasn’t needed so I left it out of the recipe! I’ve made it both ways and prefer it without!)
Frost and top with a sprinkling more of cinnamon if desired!
