We make this quiche for dinner at least a few times a month. It’s so delicious, hearty, and easy to make earlier in the day and bake at dinnertime if I know I have a busy afternoon ahead. Serve it with a smoothie, a salad, or fruit, and you have a simple, satisfying meal everyone will love.
Spinach and caramelized onion quiche
- 2 cups spinach
- 1/2 sliced red onion
- 6 stripes of bacon (chopped)
- 10 eggs
- 1/4 cup heavy cream (we use raw cream)
- 1/2 cup shredded cheese (we use raw cheddar)
Sautee the bacon, remove when cooked. Sautee the spinach and onion in the bacon fat until onions are transluscent. Whisk together eggs and cream, add in salt and pepper to taste. Meanwhile, bake your pie crust for 7 minutes according to the temperature suggested – crust should be just very slightly brown and set. Add your spinach, onion, bacon, and cheese into it your egg mixture. Add that into the crust. Bake at 350 for 45 minutes or until the egg is fully cooked.
