Ingredients:
For the Rolls:
3 ½ cups all-purpose flour
2 ¼ teaspoons active dry yeast (1 packet)
1 cup warm milk (about 110°F)
3 tablespoons sugar
1 teaspoon salt
1 large egg
4 tablespoons unsalted butter, softened
For the Herb Butter:
4 tablespoons unsalted butter, melted
1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried rosemary)
1 teaspoon fresh thyme, finely chopped (or ½ teaspoon dried thyme)
1 clove garlic, minced (optional)
1 teaspoon parsley, chopped (optional)
Pinch of salt
Directions:
Activate the Yeast: In a small bowl, mix the warm milk, sugar, and yeast. Let it sit for 5-10 minutes until it becomes foamy. This indicates that the yeast is active.
Make the Dough: In a large mixing bowl, combine the flour and salt. Add the yeast mixture, egg, and softened butter.
Mix until the dough starts to come together. You can use a stand mixer with a dough hook or mix by hand.
Knead the dough for about 5-7 minutes (or 3-4 minutes with a mixer) until it becomes smooth and elastic. If the dough is too sticky, add a little more flour, one tablespoon at a time.
Let the Dough Rise: Lightly oil a large bowl and place the dough inside, turning it to coat with oil. Cover the bowl with a clean towel or plastic wrap and let it rise in a warm, draft-free place for about 1 hour, or until the dough has doubled in size.
Shape the Rolls: After the dough has risen, punch it down to release any air. Divide the dough into 12 equal pieces for larger rolls, or 16 pieces for smaller rolls. Shape each piece into a smooth ball by tucking the edges underneath and pinching the bottom to create tension on the surface. Place the rolls in a greased baking dish or cast iron skillet, leaving a little space between each roll. Cover them again and let them rise for another 30 minutes.
Prepare the Herb Butter: In a small bowl, combine the melted butter, chopped herbs, minced garlic (if using), and a pinch of salt. Stir until well combined.
Bake the Rolls: Preheat your oven to 375°F (190°C). Brush the tops of the rolls with about half of the herb butter mixture.
Bake the rolls for 15-18 minutes, or until they are golden brown on top.
Finish and Serve:
As soon as the rolls come out of the oven, brush them with the remaining herb butter for an extra layer of flavor.
Serve warm.
