At least three nights a week, I whip up breakfast for the next day. It makes the next morning so smooth and easy to be able to just pop a casserole type breakfast into the oven and begin homeschool lessons and chores for the day.

This French toast bake is not only super easy, but it’s filled with protein from all the eggs, and it uses up any bread you have that might be a bit too dry for sandwiches.

To a 9×13, I add cubed up bread (I use my homemade sandwich loaf, my sourdough bread, or the cinnamon swirl bread is great too!) you just want to add enough that it comes halfway up the side of the baking dish.

Then in a bowl I whisk up a dozen eggs, 1 cup of milk, and a 1/2 cup of half and half or cream.
Add in 1 tbs vanilla
Add in 1 tbs cinnamon
Pinch of salt

Whisk up and pour over the bread.
Cover with plastic wrap and place in the fridge overnight!

In the morning remove plastic wrap and bake at 375 for about 30-35 mins until egg is set. Serve with butter, maple syrup, and fruit!
